Chef and entrepreneur Mariano Araya brings over two decades of culinary mastery to Miami’s dynamic gastronomic landscape. What began as a childhood necessity soon evolved into a lifelong devotion—an artistic pursuit that transformed his passion for cooking into a celebrated career.

Educated at the prestigious Gato Dumas Institute in his native Argentina, Mariano refined his craft in renowned establishments such as Olivo’s, Marfil Bistro, and Mariano’s Cuisine. These formative years shaped his culinary identity, defined by technical rigor, respect for ingredients, and an unwavering commitment to excellence.

Throughout his journey, Mariano has trained under some of the world’s most influential culinary figures, including Antonio Bachour, Javier Guillen, Chef Rich Rosendale, CMC, Najat Kaanache, Oriol Balaguer, Carles Mampel, and Xavier Barriga. Their mentorship enriched his repertoire, inspiring a style that harmonizes innovation with ancestral roots. His cuisine reimagines traditional Argentine flavors through a modern lens, creating multisensory experiences that linger long after the last bite.

An award‑winning chef, Mariano has earned top honors in numerous cooking and grilling competitions across South Florida. His expertise also extends beyond the kitchen, traveling throughout the United States to collaborate with prestigious organizations such as the Hawaii Food & Wine Festival, Dom Pérignon, Ocean Reef Club, Friends of James Beard Foundation, and Rosendale Collective Master Culinary Classes.

Mariano is now in the final stages of unveiling his most personal project yet: Casa Mariano, located in Doral, FL. Set to open in Spring 2021, Casa Mariano will showcase a curated collection of his most beloved dishes—an intimate culinary destination where creativity, technique, and memory converge to deliver unforgettable dining experiences
